My sweet Baby J had surgery last Thursday. There were a few bumps, but she came through fine and handled everything like the champ she is. Our little apartment has been full of family since we got home yesterday. If I'm worn out, I can only imagine how tired she is. Since I've been off-kilter for the last couple of weeks leading up to her surgery, I thought she deserved a comforting, hot, homecooked meal.
Enter "Slow Cooker Chicken and Dumplings" from The Kitchen Life of a Navy Wife blog. That's also where this picture of deliciousness is from.

The only thing I did differently was to add some celery seed, thyme leaves and garlic powder to the top of the chicken before covering it with the soup. Fan-freaking-tastic!! I like "slippery" dumplings, and these were just perfect (make sure you toss the cut up biscuits with the flour to keep them from sticking). To keep the carb fest going, I baked up the 7 Up biscuits that Baby J loves so much. She was a happy camper and actually managed to eat all of it. If I can keep my eyes open awhile longer, I just might tackle May Flaum's Coca Cola cake. Then again, maybe I'd rather cuddle with my girl and save the cake for tomorrow.
